Oven baked pumpkin with figs, dates and grilled peaches. This dish is perfect for dinner with your friends. It looks great, smells a-m-a-z-i-n-g and tastes like heaven. You’re going to love it. We promise.

Ingredients

 ♦ 1 tiny pumpkin

♦ 1 big read onion

♦ 5 garlic cloves

♦ Olive oil

♦ 6 Fresh figs

♦ 6 dates

♦ 3 Peaches

♦ Minced coriander

How to

(It takes about 50 minutes)

Step 1.: Preheat your oven on 200 C°

Step 2: Cut the pumpkin in half, remove the inside and cut it into thin slides. After that, cut the Onion in wedges and peel your garlic; we don’t cut the garlic.

Step 3: Place the pumpkin slides, the garlic (in wholes) and your onion pieces in a big baking dish and drizzle a bit of olive oil on top. Put it in the oven for about 30 minutes. Make sure to check it regularly. Every oven is different!

Step 4: Get the baking dish out of the oven stir and put the dates on top of the pumpkin. Now cut the figs and also place them on top of the dish. Sprinkle a little extra olive oil on top and put it back in the oven for about ten minutes.

Step 5: Time to grill those lovely peaches. Cut the peaches in half and pit them. Sprinkle a bit of olive oil on top and put them on the grill until grill marks show. Make sure you grill both sides.

Step 6: Once the baking time of the pumpkin dish has passed; get your dish out of the oven and put some coriander on top. Garnish this dish with the peaches.

Extra tip: if you want you could also add some couscous or brown rice (especially if you’re cooking for the boys).
