Zucchetti – spaghetti made out of zucchini- equals the perfect dinner. Especially if you add a little bit of homemade broccoli pesto and some parmesan cheese to the mix. Read on for this amazing recipe.
You need (for 2 persons):
♥ 4 Zucchinis
♥ ½ Garlic clove
♥ 3 Handfuls of fresh basil
♥ Handful of pine nuts (slightly toasted)
♥ Extra virgin olive oil
♥ 1 Broccoli
♥ 2 Chicken filets
Note: You can easily make this recipe vegetarian by leaving out the chicken.
First cut the chicken in squares and grill it. This part is easy, now lets get on with the pesto. I’ve learned from Mr. Jamie Oliver that really good pesto’s have their pine nuts very lightly toasted. This way it gives it a creaminess flavor, so do that first. Crush the garlic and put it together with the fresh basil in your food processor (or use a mixer in a large bowl). Also add a little Parmesan (about 5cm). Stir this gently and add 2 tablespoons of olive oil. Make sure it gets to the right consistency and add more or less if needed. Now cook your broccoli the usual way, cut it up and process it together with the pesto in the food processor. Time to get out the spirelli! Make your zucchetti, put it in hot (boiling) water for about 3/4 minutes. After that rinse it and press it with a fork to make sure you don’t get a watery plate later on ;). Serve it on a nice plate and add some extra Parmesan cheese on top.
