Guilt Free Brownies

Invited for a little garden party I was asked to bring some food with me. What in the world was I going to make? I wanted to make something that anyone could enjoy. Then I thought about this brownie recipe that I haven’t made in a long while and I made exactly that. Everyone loved it and kept asking me for the recipe. I figured it would be easier just to do a little post about it. So here it is! Hope you enjoy.

Since this recipe is suitable for vegans, vegetarians and anyone with gluten, egg or lactose allergy I figured it was the perfect dish to bring with me that literally anyone could enjoy. Plus it makes them feel totally guilt free. What’s not to love about that? Here’s what you need:

  • About 30 medjool dates (without pit)
  • 2 tbsp. Coconut Oil
  • 2 handfuls of Cashew Nuts
  • 5 tbsp. organic raw cocoa powder

These brownies are probably the easiest you ever made from scratch! And who knows they might even be the tastiest :)

Step 1| Remove the pits from the dates. After doing that you can either just put them in your kitchen machine or chop them op and then put them in your kitchen machine. This depends on how ‘good’ your machine functions. Some get stuck, like mine. So I prefer to chop them first. After that you can add the (melted) coconut oil.

Step 2| Put your cashew nuts into a towel and smash it with a hammer. This way you will get tiny chunks of cashew nuts. Now add these to your mixture and mix with a fork. If you like you can also add a bit of coconut flakes, but that depends on your own taste.

Step 3 | Time to put in the most important ingredient! Cocoa Powder. Now when you’re buying your cocoa powder make sure you buy organic one. You also want to get one that’s as pure as possible (some have added sugars and we absolutely do NOT want that). Mix this into your mixture. Now grab a big baking tin, put the mixture in and make it flat with a fork. This luscious brownie is not going to be put into the oven, BUT in the freezer. Super easy! After about 4 hours your brownie is ready to get cut into petite brownie squares.

And that’s it! Super easy, healthy and yummy!
