If you’re currently in the Netherlands, just like me. You are going to need a treat to cool off a bit, because it is SO hot outside. Today happens to be your lucky day, because I have this amazing recipe for the perfect healthy summer popsicles.
This recipe is ready over night and very easy. I believe there is way too much sugar, dairy and other unhealthy ingredients that I cannot even pronounce in all of those supermarket-ice creams and making natural ice creams is so easy. Why don’t more people do this? It’s not as if you need lots of stuff, because the only thing you need is a blender, freezer and some ice cream molds. Plus the taste is better ánd it isn’t as bad for your health. It is the ultimate summer treat!
- (For 6 ice creams )
- 3 peaches
- 1/2 lemon
- 3 twigs of fresh mint
- Coconut Milk
- 1 slice of watermelon
- handful of blackberries & blueberries
- Ice Cream Molds
- Wooden ice cream sticks
1. Grab your blender out of the kitchen cabinet. Cut the peaches into thin slices (leave the skin on) and putt them together with one cup of coconut milk in the blender. Add the slice of watermelon, 1/2 lemon juice and add the leaves of mint. Now blend it for about 3 minutes or so.
2. Put a few blueberries & blackberries into every ice cream mold. Now you can add the creamy mixture and insert the ice cream sticks.
3. Time to hit the freezer. They will need about +/- 5 hours to set.
