Morning guys. Figured it was time to share a little recipe. This pancake-dish only takes about ten minutes to prepare, so that’s just enough time to surprise your love with some breakfast in bed!
As you may or may not have noticed, it’s been a while since I wrote down a recipe. Food and fashion are both things I’m really passionate about, but I wanted to make this website a bit more about fashion then food. That being said, that doesn’t mean that I gave up the food sharing completely. I really like posting these kinds of blogs, so I’m going to continue, but maybe not every week. Quality over Quantity, right?
So, about this recipe. These banana pancakes have been my favorite forever. I eat them on many occasions, like when I have something to celebrate, in the morning after a rough nigh out or for Sunday brunch! They’re really filling and perfect when you’re craving for something that is sweet. They’re simply the best and worth the share. So here we go!
For 1 stack of pancakes, you need:
– Half a cup of buckwheat flour
– 1 Banana
– 2 Dates
– 2 Eggs
– Milk (I used spelt milk)
– Syrup (maple)
– Handful of blueberries
– Coconut oil
Now the cooking part is easy. Cut the banana and dates, crack the eggs and put this together with a big tablespoon of flaxseeds in a bowl. Now add a splash of (spelt) milk. Use a hand mixer to mix it into a smooth blend -or use a blender! You could also smash it with a fork, but that usually takes a bit more time. Add some extra milk or flour to reach the thickness you prefer.
Put a little bit of coconut oil in a big frying pan, wait until it’s heated and then put your mixture in the pan. I like to keep the pancakes tiny so I usually use about half a scoop a pancake. In the meantime you can cut the figs and wash your blueberries. Once you’ve finished baking your last pancake it’s time to built your stack! Add some blueberries, put the figs on top and drizzle a bit of syrup on your plate. That’s it! I hooope you’re going to love it just as much as I do.
