Recipe: Coconut Valentine’s Breakfast

Remember this recipe for the upcoming Valentine’s Day. It’s the best breakfast-in-bed surprise for anyone you love.

– 1 banana
– 3 eggs
– 1/3 cup coconut flour
– 1/4 cup (gluten free) oats
– Tbsp. Maca powder
– 2 tbsp. Flaxseeds
– 2 dates
– 1/2 cup plant based milk
– Coconut oil

Blend your oats into a flour in a blender. Add the soy (or any other kind of) milk and the eggs. Mix again. Add the coconut flour, the maca powder, the dates and flaxseeds. Blend the mixture until its nice and thick. After that put the mix into a large bowl and get a little air in it by stirring with a whisk.

Now your base is ready.

To get those Valentine hearts use tin heart shaped molds. Put the coconut oil in your pan, put the tin molds in and add a little mixture in every heart shaped mold.



To make the plate look better you can add any fruit or nuts you like. Our favourites: blueberries, blackberries, strawberries, pomegranates, walnuts and almonds. Top your pancakes with Raw Honey or Coconut Blossom Sugar.
