Have you ever made a date pie? This one with pistachio, hazelnuts and coconut is a must-try and suitable for vegans too.
Dates are one of my current addictions. I love them in the morning in my smoothies or just as a raw mid day snack because they are a good source of energy, fruit sugar and fiber. This past weekend I decided to incorporate them in a pie. Its taste was beyond good, so I just had to share this recipe with you all. Hope you like it!
You need (for 1 small pie):
- Big bag of fresh Mejdoul dates
- 3 tbsp. coconut oil
- Handful of pistachio nuts
- Handful of hazelnuts
- Handful of coconuts flakes
Step 1| First you need to cut the dates into tiny chunks. What I always find easy to do is cut them in half, remove the pit by hand and after doing that just cut the dates into pieces.
Step 2| Put the date chunks into a big bowl. Now melt the coconut oil. I always just put it on low heat until the oil is melted.
Step 3 | Pour the coconut oil into you bowl with date chunks. Now stir. After this you can add all the nuts. You can crush them first if you prefer the nuts to be a bit smaller. Stir again.
Step 4 | Grab a baking tin, make sure it is secure and scoop the date-nut-oil mixture into your tin. The only thing you need to do next is to put it in the fridge for approximately 4-5 hours.
Step 5 | Topping-time! Don’t be easy on the coconut flakes and make sure your whole pie is covered. This gives it its perfect and yummy look. Enjoy!
